Twice Baked Faux Potatos (Cauliflower)

1 bag (1 lb) frozen cauliflower1/4 C Grated Parmesan (fresh)1 1/2 C Shredded Cheddar3 oz Cream Cheese1/4 C Sour Cream6 Slices bacon, cooked crispSeason to tasteI like Mrs Dash Garlic & Herb
Pre-Heat oven to 350
Cook cauliflower in salted (if desired) water until tender but not overly soft. Drain.
Mash with potato masher.
Mix in cheeses and bacon, reserving 1/2 chedder for the top.
Spread in greased casserole dish (I used deep dish glass pie plate).
Sprinkle remaining cheddar on top.
Bake uncovered at 350 for 15 mins or until hot thru and cheese on top is melted.
