White Chocolate Covered Granola Bars

Ingredients
2 1/4 Cups Rice Krispies2 Tablespoons Ground Flax Seed1/4 Cup Chopped Peanuts1/4 Cup Chopped Dried Fruit (Cranberries)2 Tablespoons Flaked Coconut1 Teaspoon Vanilla Extract 1 Teaspoon Orange Extract1/2 Cup Creamy Peanut Butter1/2 Cup Brown Rice SyrupSalt to tasteCinnamon to taste1 1/4 to 1 1/2 Cups White Chocolate Chips, Melted
Directions
Mix the rice krispies, flax, peanuts, dried fruit, and coconut in a large bowl. Microwave peanut butter and brown rice syrup until runny (about thirty seconds). Add the wet ingredients to the dry ingredients, making sure that everything gets sticky. Add salt and cinnamon to suit your taste.

Line a 7" x 11" pan with parchment paper, and pour the mix in. Cover with another layer of parchment paper and squish to fit the pan. Stick this in the freezer for about 20 minutes.

Meanwhile, melt the white chocolate chips in a dutch oven. Remove the granola bars from the freezer, and pour/spread the white chocolate over the bars. Place it back in the freezer for another 20 minutes or so to allow it to set. Then cut into 12-16 (I got 16) bars, and enjoy!
