Perfect Turkey Meatloaf

1 lb ground turkey1 cup chopped carrots1 cup diced celery3 cloves garlic, minced2 tbsp olive oil1/2 cup italian bread crumbsKetchup (optional)
Preheat oven to Saute carrots, onions, and celery in the olive oil in a pan until onions are translucent. Add garlic towards the end. Remove veggies from heat and set aside to cool. Mix the breadcrumbs into the ground turkey. Add more if the turkey is too "wet". Add the veggies and mix together by hand. Place in a loaf pan and cover with foil. Bake, covered for 40 minutes. Remove foil and add ketchup, if using, then bake uncovered for an additional 10 minutes.
