Cheesy veg bake

1 medium carrot thinly sliced2 meduim potato thinly sliced1 meduim onion thinly sliced1 cup of chopped turnip/swede (pref thinly sliced)0.5 cup grated cheddar2 tbsp butter2 tbsp flour2 cups vegetable stock/brothblack pepper1 tspn dried oregano
1) thinly slice all the vegetables (thinner the better, although if you want to speed the prep time, just chop into small peices) and put in an oven dish either in layers, or just a random mix
2) melt the butter in a pan, mix in the flour to make a roux, then add the veg stock stiring all the time to make a sauce. Then mix in the cheese, pepper and oregano. Poor over the vegetables.
3) bake in oven (gas mark 6) for 40-60 min until top is slightly golden and crispy, and the under layers are soft (poke it with a sharp knife to test)
