Low-fat Penne Rosa

Ingredients
12oz whole wheat penne, cooked to package directions4 cloves minced garlic1/4 tsp red pepper flake2 medium tomatoes, seeded and chopped8oz sliced button mushrooms4C fresh spinachnon-fat plain greek yogurt, one 6oz container1C marinara sauce3T parmesean cheese
Directions
Warm olive oil over medium low heat. Add garlic and red pepper flake and stir until garlic softens, about 2 minutes. Add mushrooms and tomatoes and cook until the mushrooms start to release their water, about 5-6 minutes. Turn heat up to medium-high and add shrimp. Cook until they are opaque and pink. Remove pan from heat and add the spinach. Stir it in and cover with a lid until spinach is wilted, about 5 minutes. Return to medium heat stove and add marinara and greek yogurt. Stir together and heat through. Serve with parmesean cheese if you like.
