Quinoia Curry Salad

Ingredients
Quinoa 1 cup Onions, raw, diced, 80 grams Garlic, 3 cloves minced * Olive Oil, 1 tbsp * Olive Oil, .33 cup * Green Peppers (bell peppers), diced 95 grams * Baby Carrots, raw, grated 140 grams * Apricots, dried, chopped, 55 grams * Almonds, .25 cup, slivered and roasted * *Lemon Juice, 2 fl oz * Honey Mustard, 2 tsp * Salt, 1 dash * Pepper, black, 1 dash * Curry powder, 1 tbsp
Directions
Wash and drain quinoa. Roast in pan until dried and starts to pop.

Soften the garlic and onions in 1 tbsp oil. Stir in half the curry and warm through for a few minutes, set aside.

Bring 2 cups of water to a boil, add the quinoa to the water and cook until the grains absorb the liquid.

Mix oil, lemon, salt, pepper and mustard to make a dressing.

Mix remaining ingredients together, add quinoa, onions and dressing. Chill.
