Black Bean Soup

Ingredients
Bush's, Black Beans, 3 cup Onions, raw, .5 cup, chopped Garlic, 2 clove *Peppers, sweet, red, fresh, .25 cup, chopped Jalapeno Peppers, 1 pepper Chili powder, 1 tbsp **McCormick ground cumin, .5 tbsp *365 Organic Vegetable Broth, 3.5 cup Olive Oil 1 Diced Carrot
Directions
Heat Olive oil on medium heat in a large sauce pan. Sautee onion, jalapeno, garlic and red pepper until soft and onion is translucent. About 5 minutes. Stir often. Add chili powder and cumin. Cook an additional 4-5 minutes. Add 2 cans of black beans undrained and most of the broth. Stir and bring to a boil. Turn heat down and simmer for 20 minutes. Using a food processor puree the remaining can of beans (undrained) and add to the soup with the remaining broth and the diced carrot. Bring back to an active simmer. Cook for an additional 30 minutes or more.
