Ingredients
1 c. mushrooms1 c. peppers1 c. broccoli1 c. zucchini1/2 c. cauliflower1 can Hunts diced tomatoes w/basil, oregano & garlic1/3 c. olive oil
Directions
Cut all ingredients into bite-size pieces. Steam the broccoli and cauliflower till tender crisp. Put all ingredients into frying pan or electric skillet. Add oil and cook/saute' till done. Makes about 5 1-cup servings. May be served over rice, pasta or left alone and add meat such as chicken.
