Stuffed Bell Peppers

Ingredients
7 med bell peppers, color is your pref.1lb ground beef (extra lean... You could also substitute turkey, chicken, tempeh, boca crumbles, or tofu)1/2 cup chopped onionseasoning (your preference I used garlic, rosemary, and thyme)Handful of fresh spinach leaves1 can no salt added diced tomatoes1 cup steamed brown rice
Directions
Steam rice separately. Brown garlic, onions, and seasonings, add meat and cook all the way through. Drain juices, add in spiniach, tomatoes, and rice. Stuff in hollowed out bell peppers. Bake in oven at 350 15-20 mins, until warm.

Serving Size: makes 4 large stuffed peppers
