Breakfast Burrito

Ingredients
1/4 cup each, chopped onion, mushrooms, and cherry tomatoes2 cups fresh spinach1 oz Athenos Reduced Fat Feta Cheese2 mission carb balance tortillas1/2 tsp saltdash pepper1 tsp dried basil4 large egg whites
Directions
Spray small frying pan with cooking spray. Add chopped onion and mushroom and saute 3-4 minutes. Add chopped tomoatoes and cook 2 minutes, then add spinach. Cover pan and cook til spinach is wilted. Sprinkle with salt, pepper, and basil. Puch veggies to the side and scramble egg whites. When they are almost set, stir veggies in and cook til done. Top with feta, divide in two, and roll filling into tortilla. Enjoy!
