2/3 cup fresh-picked, shelled purple hull peas;1 tablespoon minced or finely chopped fresh onion;1/4 tsp. black pepper;pinch of each: garlic powder, dried parsley (crumbled), dried oregano (crumbled);1/4 of 1 small dried bay leaf;Butter Buds;salt to taste.
Rinse shelled peas well. Pick out any broken or discolored peas; drain. Spray a small pot with non-stick cooking spray. Add onions and cook over medium heat, stirring constantly until soft. Add peas to pot; cover with cold water. Stir in spices except Butter Buds and salt. Bring to a boil over medium-high heat. Reduce heat, cover, and simmer approximately 45 minutes or until cooked. Pick out the bay leaf (if you can find it!). Add Butter Buds and salt to taste; stir well. Using a spoon, smash some of the peas against the side of the pan and stir to thicken. Eat and enjoy!
