Eggplant Pizza

1 medium eggplant1/2 cup parmesan cheese1/2 cup almond flour1 eggsalt and pepper to tastePizza toppings of your choice - I used 4 oz. cooked shrimp, 60 grams green olives, 1/2 cup mushrooms, 2 oz. mozzarella cheese
Peel and grate Eggplant. Make sure to squeeze excess water from eggplant. Mix eggplant, parmesan cheese, almond flour, egg, salt and pepper together.
Cover baking sheet with parchment paper. Grease the paper and pour the mixture in the center. Using your hands gently spread the mixture evenly until it is about 1/8 inch thick.
Bake 35 minutes at 350 deg., flip crust over and bake another 5-15 minutes - keep an eye on it
Add toppings - shrimp, mushrooms, olives, cheese - or anything that you might want on your pizza
Pop back in oven until toppings are warm and cheese is melted.
