Steve's Basic Risotto

2/5 cup Italian medium-grain rice1 tsp olive oil1/2 Tbsp butter2 tsp grated parmesan cheesewater and/or vegetable brothsalt and pepper to taste
1. Use a broad but not too shallow pan. Heat oil, add rice, and brown over medium heat.
2. In quarter-cup batches add water and/or brother and let it be absorbed by the cooking rice. You may substitute wine or other liquids for some of the water. Dry wines are preferable to sweet wines. Reduce to a simmer, cover, and stir frequently.
3. When rice is tender and the released starch has produced a creamy texture remove from heat, stir in butter, and season. Top with cheese and serve.
