Ingredients
1 - Thomas English Muffin, split2 - Medium button mushrooms or portabella1 - tbsp, chopped onion1 - tsp., chopped green pepper1 oz - shredded monterrey jack cheese 1 - tbsp. grated fresh parmesan cheese1 - tbsp, tomato pasteSpices, garlic powder, onion powder, basil, oregano, salt & pepper
Directions
Per serving: Split 1 English Muffin in half, spread tomato paste on both halves. Sprink with spices.
Slice mushrooms and layer on both halves. Add onion, green pepper and shredded cheese. Sprink more spices and top with grated parmesan cheese. Put into broiler and about 10 minutes, you have a great lunch. Only 306 calories, very filling and delicious. Using low fat cheese is alot less calories!
