Blueberry Pie Oatmeal (vegan!)

3/4 cup rolled oats1/2 cup unsweetened vanilla almond milk (or non-dairy milk of choice)1/2 cup ++ water (depending on your desired consistency)1/2 tsp cinnamon1/8 tsp coconut extract1/2 scoop sun warrior raw vanilla protein powder (or other vegan vanilla protein powder)vanilla stevia/additional stevia to taste1 cup frozen blueberries, semi-thawedadditional extracts if desired: I suggest 1/8 tsp almond and 1/2 tsp butter vanilla, if you have it.
Cook oats & liquid over medium heat for 6-7 minutes. When almost done, add remaining ingredients and stir to combine. Cook 2-3 additional mins, or until done. Add additional liquid as needed. Blend with an immersion blender (or let cool and blend in regular blender/food processor) until nice & blue but still chunky. Pour into individual serving bowls and enjoy!
