Small head of red cabbage sliced thinHalf a vidalia or sweet onion chopped1/3 cup chopped walnuts1/3 cup dried cranberriessmall apple deseeded and choppedsmall head of Fennel, choppedsmall chunk of roquefort, crumbled1.5 tablespoons of light mayo1.5 tablespoons of regular mayo
Directions
slice and chop all the veg, add the walnuts, cheese, cranberries and mayo, toss and serve.
