4 oz. tomato paste8 roma or plum tomatoes1 medium-large onion, any color (I prefer white or yellow)1 jalapeno2 serranos4 cloves of garlic1/2 medium bell pepperJuice of 1 lime1 TBSP EVOOcilantrosalt and pepper
Core and cut your tomatoes in half; Also cut onion into chunks. Cut peppers in halves long way; if desired, get rid of the seeds in your hot peppers. The more seeds, the hotter! Arrange your veggies on layers of foil on cookie sheets and drizzle with olive oil and sprinkle with salt and pepper. Grill until veggies are tender and peppers are slightly charred. When done, add lime juice and tomato paste with your veggies to a blender and blend as smooth or chunky as desired. Once the salsa is cooled, add cilantro to taste. WAH LAH! Salsa :)
