Oatmeal Cookie in a Ramekin (or mug)

1 Tbsp. I Can't Believe It's Not Butter! Light1 Tbsp. firmly packed Splenda brown sugar blend1 Tbsp. Splenda for baking2-3 drops vanilla extract {a splash}Small pinch salt1/4 tsp. pumpkin pie spice1 egg yolk2 Tbsp. quick cook oats1 1/2 Tbsp. flour1 Tbsp. Craisins (optional)
In a ramekin or coffee mug, cook butter in the microwave for about 30 seconds or until melted. Add sugars, vanilla, salt and pumpkin pie spice. Stir to combine. Add the egg yolk to your cup. Stir to combine. Add oats and flour, then stir again. Add the Craisins (if using) and give a final stir. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds. Mine took the full 60 seconds.
