Boysenberry and Mascarpone French Toast

Ingredients
2 egg whites2 slices whole wheat bread1 tsp ground cinnamon1 tsp vanilla extract1 tbs mascarpone cheese1-1.5 tbs Knott's Boysenberry Preserves
Directions
Whisk the egg whites, cinnamon, and vanilla together. Dip the bread in the mixture, making sure to cover all of the bread. Spray a nonstick pan with a little cooking spray and cook the bread for about 3-4 minutes each side, until a light golden brown. Once done, let them cool for a couple of minutes, then top with the mascarpone and boysenberry preserves. Enjoy!
