Greek Yogurt, Lentils, and Chicken FOR TWO

1 chicken breast1/2 cup dry lentils1 cup water1 cup chicken broth1 cup PLAIN lowfat greek yogurt (I used OIKOS Organic)1 large bell pepper1 cup fresh spinach1 Tbsp yellow curry powder1 tsp lemon juice
Cook lentils and 1 cup water water over medium heat until lentils are soft (about 20 mins).
Cut the chicken breast into bite-sized chunks.
In a large skillet, cook up the chicken breast in chicken broth until mostly done (about 15 mins) over medium-high heat. Add curry powder to cooking chicken.
Slice up the bell bepper into long thin slices. Place into skillet with spinach and let cook for about 2-3 minutes. Add 1 cup yogurt to the skillet and stir in. Take cooked lentils and stir in. Add the lemon juice and stir in. Let cook together for another 2-3 minutes. Remove from heat and serve.
Serving Size: Makes two servings
