Basil Cauliflower Pizza

Ingredients
Makes 4 small pizzasCauliflower Crust:2 eggs2 cups fat free shredded mozzarella cheese2 cups grated cauliflower2 garlic cloves1/4 cup julienned basilPizza Toppings:1 cup marinara (1/4 cup per pizza)1 zucchini, thinly sliced1 yellow zucchini, thinly sliced1/2 white onion, thinly sliced1 cup Ricotta cheese1 Tbsp basilpinch of salt and pepper
Directions
Preheat oven to 400 degrees.

Line a cookie sheet with parchment paper, spray with non-stick spray.

In a medium bowl, combine grated cauliflower, basil, eggs, and mozzarella. Divide into 4 amounts and press evenly on the parchment paper.

Bake the crusts at 450 degrees for 12 - 15 minutes.

Remove from oven. Add 1/4 cup of marinara sauce per pizza. Then add toppings: sliced zucchinis and sliced onions.

Mix together ricotta, 1 Tbsp of basil, and salt and pepper in a small bowl. Drop the basil ricotta cheese on the vegetables by spoonfuls.

Place back in the oven until cheese is melted, about 5 - 10 minutes.

Serving Size: Makes 4 individual small pizzas
