Curried Sweet Potato Roti

Ingredients
4 cups peeled and cubed sweet potatoes1 T Canola oil2 t black mustard seeds1 bell pepper1T grated fresh ginger root1 t ground cumi1/4 t tumeric1/4 t cayeen1/4 t ground cloves1/4 t ground cardamom1/4 t ground cinnamon2 T lime juice1 T chopped fresh cilantro12 8 inch flour tortillas
Directions
Boil sweet potatoes until soft (10 min). in a separe pan heat the oil and add the mustard seeds, stirring for a minute or tow unitl they begin to pop. Stir in the bell pepper and spice mixture and cook for 5 minutes, until the peppers are tender, adding a small amount ao water to prevent sticking. Drain sweet potatoes and mash them with the lime juice. Stir in the cilantro then add the peppers and mix well. Prepare a baking dish with a light coating of cooking spray. Place 1/12 of filling on each tortiall and roll it up. Place in baking dish, cover tightly with aluminum foil. Bake at 350 for 15-20 minutes.
