Soy Soba Noodle Salad

5 grams Wakame Seaweed (sold dry in health food shops and asian shops)75 grams Soba (buckwheat) noodles1 medium carrot, julienned75 grams cabbage (normal or pak choi), chopped1 green onion, choppedDressing:5 tablespoons soy sauce5 tablespoons lemon juice2 tablespoons sesame oil
1 Reconstitute the wakame by placing it in cold water for 5 minutes. Drain and chop.
2 Cook the soba noodles in boiling water as per the packaging, usually around 5 minutes. Tip the noodles into a sieve and wash under cold running water, agitating the noodles to get rid of the starch. Allow to drain.
3 Mix all the salad ingredients in a bowl and pour just enough dressing on top to coat the salad without leaving puddles. Serve immediately.
Makes two servings for a light lunch. I serve this with a bowl of miso soup.
