Rice paper Spring Wrap with Turkey and Peanut Sauce

Ingredients
8 sheets of rice paper8 ounces of cooked turkey breast jullien sliced16 fresh basil leaves8 butter lettuce leaves1 medium carrot grated1 sweet red or yellow pepper sliced4 thin slices of red onionSauce1 tbsp olf fashion peanut butter1 tbsp of asian chili paste1 teasp seasoned rice vinegarwater
Directions
Briefly dip one sheet of rice paper in warm water. place on clean flat surface. place 1 oz turkey, 2 basil leaves, 1 lettuce leaf, 1/8 of grated carrot, 1/8 sliced pepper, and 1/8 of sliced onion. Gently roll up like a burrito. Set on platter and repeat.
For dipping sauce, combine remaining ingredients in a small bowl. Mix well and add water to thin the sauce a little.
