Carrot and Ginger Soup

Ingredients
1 tbsp veggie oil1 onion, chopped2 cloves garlic, sliced6 carrots, peeled and sliced1 lg potato, peeled and sliced1 sm turnip, peeled and sliced1 apple, peeled cored and chopped5 1/4" inch thick slices of fresh peeled ginger6 cups water1 bouillon cube - veggie or chicken1 tsp salt
Directions
makes 6-8 servings
Heat oil in lg saucepan over med. heat. Add onion and cook, stirring about 3 mins or until softened. Stir in garlic; cook about 30 seconds more. Add carrots, potato, turnip, apple, ginger, water, bouillon and salt. Bring to a boil, reduce heat and simmer about 20 minutes or until veggies are very tender. Puree in blender or food processor until smooth.
