Grilled Radicchio

Ingredients
Directions
Head of radicchio brushed with olive oil and sprinkled with salt.Dressing:Olive oil 1/4 cupBalsamic Vinegar 2 tbsp1/3 tsp mustardsalt and pepper to taste
Cut radicchio head into quarters.
Brush with olive oil. Make sure there is part of a stem attached to each piece so they won't fall apart.
Place on a grill at high temperature. Grill on both sides.
The radicchio should be slightly burnt.
Remove. Cut into shreds, pour the dressing over and garnish with parmasan cheese if desired.
Serving Size: makes 4 one cup servings depending on size of radicchio
