Mashed Potatoes

Ingredients
4 Russet potatoes1/4 - 1/2 chicken broth, no sodiumfreshly ground black pepper
Directions
1. Wash potatoes well. Prick skins with fork and place in oven directly on rack.
2. Bake for 1 hour at 400 or until potatoes are soft throughout.
3. Slice potatoes in half and scoop out.
4. Whip potatoes using an electric mixer or potato masher to desired consistency, adding chicken broth and pepper as desired.
