Yummy Granola

Ingredients
6 cups old fashioned rolled oats (can use quick oats if desired)3/4 cup raw wheat germ1 cup snipped dried apricot bits1/4 cup snipped prune bits1/2 cup sweetened dried coconut1/2 cup raw pepitas (pumpkin seeds)1 cup sliced raw almonds1/3 cup maple syrup (real)1/2 cup canola oil1 and 1/2 tsp vanillapinch of salt
Directions
heat oven to 350 F and toast oats in a rectangular cake pan for 10 minutes. Put oats into large mixing bowl and add other dry ingredients and combine. Pour liquid ingredients over. Toast granola in 3 batches in rectangular cake tins. Cook for 5 minutes, stir, then cook for 5 more minutes and the batch is done. Let the granola cool in the pan on a rack. Repeat for each batch. When cool, store granola in airtight container with a half-cup measure to make sure you don't take too much! :)
