Caribbean Coconut Chicken

Ingredients
4 chicken breasts1 tsp olive oil1 cup chopped onion1 cup chopped green pepper1 cup chopped yellow or red pepper14 oz. lite coconut milksalt and pepper to taste1 pinch red pepper flakes
Directions
serves 4

Preheat oven to 425. In a large skillet, saute the chicken in olive oil until both sides are browned. Add veggies and cook til onions are translucent. Add coconut milk and cook for 5 minutes more. Season with salt and pepper.

Transfer mixture to baking dish and bake for 45 minutes until the veggies cook down and the chicken is tender.
