Spinach and Chicken Lasagna

Ingredients
Chicken Breast, no skin, 1 breast, bone and skin removed *Ricotta cheese, fat-free, 15 oz Spinach, frozen, 1 cup Stewed Tomatoes, 1 cup Sweet peppers (bell), 1 cup, chopped Onions, raw, .5 medium (2-1/2" dia) Garlic, 3 cloves*Campbell's Tomato Juice from Concentrate, .6 cup Tomato Paste, .3 can (6 oz) *Pasta, Lasagna Noodles, No Boil; 8 oz Dried Basil, Oregano, Thyme and Anise Seed to taste
Directions
Cobmine ricotta cheese, spinach and egg substitute. Chill until needed.
Cook chicken in Pam, then cool and dice. Set aside.
In same pan, cook onion, garlic, pepper until tender, then add tomatoes, paste, and a splash of red wine if you have some on hand.
Add desired spices and simmer until it has reduced for at least 20 minutes. Add chicken.
Layer 3 noodles in pan, top with spinach mixture, then layer tomato sauce. Repeat.
Bake 350-375 approximately 30 minutes.
