1 large can beef broth8 oz v8 juicevegetables such as summer squash, zucchini, onion, celery,carrot, brocolli.1 can white beans1 cup watersalt and pepper to tastegarlic powderfresh herbs such as parsley, basil, oreganopearled barley, cooked (1/2 recipe according to directions)
Heat oil in soup pot. Saute vegetables slightly. season with salt, pepper, garlic powder. Add beef broth and v8 juice. Add 1 cup water. Bring to simmer. Cook barley according to package directions. Add barley to soup. Simmer 20-30 mins.
