1 Tbls oil2 clovis garlic, crushed1 small onion, sliced and separated into rings1 small sweet red pepper, seeded & cut into strips1/2 lb yellow squash, sliced1/2 lb zucchini, sliced4 plum tomatoes, chopped1/4 cup fresh basil strips1 tsp lemon pepper seasoning1/4 tsp salt1/4 cup grated parmesan cheese
Heat oil in a large nonstick skillet over medium-high heat. Add garlich, onion, and red pepper stips; cook, stirring constantly, 2 minutes. Add yellow squash and zucchini slices; cook, stirring constantly, 5 minutes or until vegetables are crisp-tender.
Stir in tomatoes and next 3 ingredients; cook 2 minutes or until thoroughly heated. Remove from heat, and sprinkly with cheese. Serve immediately.
