2-3 lb. chicken (fryer or rotisserie)2 family size bags frozen corn2 cups low sodium chicken brothWater to fill crockpot to appropriate level (I made this recipe in a 5 qt. crockpot)-this was the water I had cooked the chicken in previously.
Place chicken in crockpot and enough water to cover the chicken. Season with poultry seasoning and onion powder according to your taste. Cook on low 6-10 hrs. depending on size of chicken. Remove chicken, debone and remove all skin when cool enough to handle. Add corn & chicken broth & cook on low 3-4 hrs.
