Cinnamon Plum Crumble with Coconut

1 kg/2 pounds plums 1/2 cup brown sugar 3 tsp ground cinnamon 1/2 cup whole wheat all purpose flour 3/4 cup rolled oats 3 Tbsp coconut oil 1 tsp pure vanilla extract 1/2 cup of coconut (toasted or fresh)
Preheat the oven to 175C/340F.
Wash the plums, cut in quarters and remove the seeds then place them in a deep pie dish and sprinkle with 2 Tbsp of sugar and 1 tsp of cinnamon.
Mix the coconut oil with the vanilla extract.
Place the flour and remaining cinnamon in a bowl and pour drops of the coconut and vanilla oil all over it, mix well with a spoon until the mixture resembles fine breadcrumbs then stir in the oats, coconut and remaining sugar.
Cover the plums with the crumble mixture and bake for about 30 to 45 minutes.
