Freedom's Chicken Jambalaya

Ingredients
2 tbs olive oil1 sweet onion, chopped2 boneless skinless chicken breast1 can (14 1/2 oz) diced tomatoes with basil, garlic and oregano.1 can (14 1/2oz) diced tomatoes with zesty green chilis14 oz whole grain brown rice(quick cooking)2 cans water
Directions
put oil in dutch oven over medium heat. add chopped onion and saute until translucent. Add cubed chicken and cook until cooked through. add both cans of tomatoes, rice and water stir well. Turn to high and bring to a boil. then turn down to med-low and simmer for 20 mins.
