Ingredients
Directions
4 boneless skinless chicken breasts2 tsp olive oil1/4 tsp salt1/4 tsp black pepper1/4 tsp seasoning salt¼ tsp sesame seeds¼ garlic salt (or 1 clove of garlic minced)½ green bell pepper (sliced into strips)½ large onion (diced into squares)6 small red potatoes1 Head of broccoli10 tiny tomatoes (or more if you like)½ avocado to top at the end (thinly sliced)
Place your chicken into a casserole pan, then surround with potatoes and onions.
Add your seasonings then on top of your dish scatter around all the rest of your ingredients, except for the avocado.
Place in oven (covered or uncovered, doesn’t matter) at 350 F for approximately 40-50 minutes.
Remove from the oven, put avocados on the chicken then put back into the oven with broil on for about 3-5 mins. Remove and serve.
Other great ingredients to add to this dish would be mushrooms, parmesan cheese, zucchini, yams, or carrots.
Serving Size: makes 4 2-cup servings
