Flexible Chopped Salad

Ingredients
Broccoli, fresh, 1.5 cup, choppedCauliflower, raw, 1.5 cup, choppedBaby Carrots, raw, 1 cup, choppedPepper, sweet, red, fresh, 1 cup, choppedRed Onion, raw, .5 cup, choppedCucumber (peeled), 1 cup, pared, choppedItalian Salad dressing, .5 cup
Directions
Pretty simple. Chop up your favorite veggies and use about half a cup of your favorite vinegarette. A little goes a long way when it's tossed into a chopped salad. What you use for veggies depends a lot on your own likes and needs. Someone on a low carb diet might use fewer carrots, but add shredded cheese or crumbles. If you use feta, some low fat turkey pepperoni and a greek vinegarette, you have an awesome greek chopped salad. Use your imagination. The serving size here is about a cup, and makes about six, but the recipe will make more or less, depending on how many veggies you use.
