Chicken Pot Pie with crescent rolls

Ingredients
one package of chicken breasts (3 breasts)half an onion diced fine3T butter divided1/2 c olive oil1/2 c flour4 cups chicken broth frozen veggies - 6 cups2 tubes of crescent rolls (8 rolls each)
Directions
Brown chicken in skillet, and remove to bowl. Add onion and 1T butter and cook onion on medium till soft. Add rest of butter and olive oil, and flour, and mix well, cook till warm but not brown. Add broth and stir well until bubbly and thick. Add veggies. Add chicken back in, and pour into 9x13 pan or several smaller dishes. Cover with crescent rolls. Wash with a beaten egg if desired. Bake 375 degrees 12-30 minutes until rolls are cooked.
