Greek Spinach Chickpea Stew

Ingredients
Garlic, 3 cloves Olive Oil, 2 tbsp Onions, raw, 1 cup, chopped Chickpeas (garbanzo beans), 3 cup Spinach, frozen, 1 package (10 oz) yields - thawed and drainedCanned Tomatoes, 1 canOregano, ground, 1 tsp Salt, 1 dash Pepper, black, 1 tbsp *Lemon Juice, 1 lemon yields
Directions
Soak the chickpeas overnight to soften them. Then boil them until tender. (canned chickpeas may be used, which will eliminate this step)

Heat oil in a saucepan adding garlic and onion. When onion is transluscent, add chickpeas, spinach, oregano and basil to the mix. Stir and after about 2 minutes add spinach and tomatoes.
Simmer for about 30 minutes. Remove from heat, add salt and pepper and then lemon juice.
Makes 6 servings.

    Absolutely delicious; both hearty and savory. The recipe omitted 1tsp basil, and the fact that 1 lemon = 3 tbsp lemon juice. - 7/9/08

    This is really a pretty versatile recipe...a lot of ways it could be varied. I added some low sodium bacon for extra flavor. Besides, it's gluten free...yippee!! - 5/7/08
