Crustless Mushroom Spinach Tart

1/2 lb fresh mushrooms1/2 cup chopped onion2 tablespoons olive oil1 10 oz bag fresh spinach1 cup heavy whipping cream4 large eggs1/4 tsp salt1/4 tsp pepper1 1/4 cups shredded cheddar cheese1/3 cup parmesan cheese
Coat a 9 in. pie plate with nonstick cooking spray. In a non-stick skillet, saute mushrooms and onion in oil for 12-14 mins or until all liquid has evaporated. Remove to a bowl. Rough chop the spinach and place in same pan and wilt. Place in bowl with mushroom/onion mixture. In another bowl, slightly beat eggs. Mix in the cream, salt and pepper. Add the mushroom, onion, spinach mixture, 1 cup of the cheddar cheese and the parmesan cheese. Bake at 350 for 35-40 mins or until a knife inserted in the center comes out clean. Sprinkle with remaining cheese. Let stand 5 mins before slicing.
