Broccoli Slaw

2c. raw broccoli, diced small (with hand chopper, if available)2 stalks celery, diced1 red onion, diced1/3 c. craisins2T Reduced-fat Mayonnaise1/3 c. apple cider vinegar1T granulated sugar (or less, as desired)24 toasted almonds
Dice or chop broccoli, celery and red onions (in hand chopper, if available - much quicker!)
Toast almonds in oven - 400C for 5-10 min. until browned, shake pan at the half-point mark
In a small bowl (or mason jar) combine mayo, vinegar, sugar, shake well.
Toss almonds and dried cranberries in with broccoli, celery and onion mixture. Add dressing and toss salad to coat evenly.
Serving Size: Makes two main course servings, four side salad servings
