Quinoa side

Ingredients
Chicken Broth, Unsalted, Progresso 3 cupsExtra Virgin Olive Oil, 1 tbspAlmonds, 1/4 cup, sliveredCraisins 1/3 cupSpinach, fresh, 10 leaf Tomato, grape 3 oz Athenos Reduced Fat Feta Cheese, 2 oz Ancient Harvest Traditional Whole Grain Quinoa, 1 cup
Directions
Rinse quinoa and put in crockpot. Add 1 olive oil and mix. Add the chicken broth, salt, almonds and cranberries. Mix well.

Cover and cook on low for 4-6 hours, or on high for 2-4.

Add tomatoes and feta cheese. Add a large handful of spinach, and close the lid. Cook on high for about 20 minutes, or until the spinach has wilted. Mix well and serve.
