1 cup dry quinoa, cooked, drained & cooled1 cup fresh corn1 jalapeno pepper, diced1 medium onion, chopped2 cups black or kidney beans1 red pepper, diced1 medium cucumber, chopped1 tblsp (ground) cumin seed2 tblsp cilantro2 tblsp white balsamic vinegarjuice of 1 lime
Directions
Mix all ingredients together. Refrigerate.
