Blueberry Buckle

Ingredients
Cream 3/4 c. sugar, 1/4 c. shortening and 1 egg. Combine 2 c. white flour, 2 tsp. baking powder, and 1/2 tsp. salt. Add the flour mixture to the cream mixture alternating with 1/2 c. milk.Fold in blueberries.Pour into a greased 8 x 8 pan. Topping: combine 1/2 c. sugar, 1/3 c. flour, 1/2 tsp. cinnamon, and 1/4 c. butter. Sprinkle topping over mix.Bake in preheated 375 degree oven for 25-30 min. Test with toothpick to ensure it is done. Do not double and place in a larger pan. Non-dairy margarine such as Best Life Buttery Baking sticks can be substituted for butter in topping.
