Chocolate Black Bean Brownies

15 oz can black beans rinsed and drained1 cup pitted dates1/2 cup unsweetened apple sauce1/4 cup smart balance veg oil2 tsp instant coffee1/2 tsp baking powder1/2 tsp salt1/4 tsp pure vanilla extract1 large egg2 tbsp stevia2 cups of Vi-Shape1/2 cup unsweetened cocoa powder1 cup cooked quinoa1/2 cup chopped walnuts1/2 cup mini dark chocolate chips
preheat oven to 350 degrees
combine dates, oil, and applesauce in a bowl and heat in microwave for a few minutes. Remove from microwave and blend in food processor until smooth. Add black beans, instant coffee, b powder, vanilla extract, egg, salt and stevia until well blended. Scrape walls of blender, add Vi-Shape and cocoa powder. Pulse until blended. Scrape mixture into bowl and fold in chocolate chips, cooked quinoa and walnuts.
Grease muffin tins and spoon in batter, place in center of oven and bake 350 for 15 minutes. Careful not to over bake - they will firm up once cool, and do not rise very much.
