Eggs Benedict with Hollandaise Sauce

2 eggs1 english muffin (sliced and toasted)2 slices canadian bacon2 Tbsp Prepared Hollandaise SauceNon-stick pan w/ 1 inch of water1 tbsp white vinegar
1. place pan with water and vinegar on stove and bring to a boil. Reduce heat and bring to a simmer.
2. crack eggs into a condiment dish or small bowl (1 per bowl). When water comes to a simmer carefully place egg in the water, don't drop/plop it in, roll it into the water. DO NOT touch the egg until it is done cooking, 7-8 minutes will give you a slightly runny yoke. Carefully remove egg from the pan using a slotted spoon.
3. Place english muffin on plate, top each half with a piece of canadian bacon, a poached egg, and a tablespoon of Hollandaise sauce.
