8 large green peppers10 Wegmans mild poultry Italian sausage links (2 packages)1 cup bread crumbs (cut the bread crumbs in half to reduce calories by 30 per pepper)1 medium onion10 medium mushrooms2 tsp. extra virgin olive oil3 cloves of garlic**The stuffing is enough to generously fill 8 large peppers
Brown the sausage in a pan. Add in vegetables, bread crumbs, olive oil. Mix together. Stuff peppers and cook in the oven for 25 minutes, or until browned.
