Grilled Sausage and Summer Vegetables

Ingredients

1 package of spicy chicken sausages (as mentioned above, I got the "Spicy Jalapeno Chicken Sausages" from Trader Joe's.1 cup prepared whole wheat Farfalle (bow tie) pasta2 tbsp prepared pesto sauce (I enjoy Classico brand)1/4 cup sundried tomatoes (I don't use the ones in oil, but go ahead if you'd like... just remember to drain them!)1 bunch of snap beans (approximately 3 cups. I used a medley of green, purple, and yellow beans)1 Summer squash or zucchini2 tbsp balsamic vinegar1 tbsp olive oil3 cloves garlic, minced1 tbsp fresh chives, minced
Wash veggies and trim edges as needed
Slice squash into 1/4-1/2 inch slices (I use a mandolin)
Mix together the vinegar, oil, garlic, and chives
Toss veggies in the vinegar mix
Using either a grill basket or pan, cook the veggies over prepared grill for 25-30 minutes, to your preferred liking.
Add the sausage onto the grill during the last 10 minutes of the veggies.
While the grill is going, cook noodles according to package
After all is grilled, slice each sausage into 6-8 "bite sized" pieces.
In a large bowl, add noodles, sausage, veggies, and your pesto.
Eat while warm!
Serving Size: Makes 5 healthy portions
