Oatmeal Pancakes

Ingredients
1 cup almond milk3/4 cup oatmeal (uncooked regular oats)3/4 cup oatmeal flour (blend oatmeal in blender until flour-like)1 tsp baking powder1/4 tsp salt4 large egg whites1/2 tsp cinnamon1 tsp vanilla extract
Directions
Heat 1 cup of the almond milk for about 90 seconds in the microwave and add the oatmeal and vanilla. Set aside. Beat egg whites into a stiff foam with hand mixer or blender. Mix remaining dry ingredients together and combine with milk/oatmeal mixture. Fold in egg whites until mixture is well blender. If you find your batter is too thick add almond milk or water. Use a 1/4 measuring cup for each pancake. Cook each side until golden brown.

Serving Size: makes 5 pancakes using a 1/4 cup of batter
