Cheesy Zucchini Casserole

Ingredients
Zucchini, 2 cup, choppedYellow Sweet Corn, Canned, 1 can (12 oz) yields *Green Chili Peppers, canned, 1 cup Red Ripe Tomatoes, 1 cup, chopped or sliced *Turkey, Ground turkey, 93% lean, 16 oz Cheddar Cheese, 1 cup, shredded Onions, raw, 1 tbsp minced finelyOne clove garlic, minced finely1 tsp olive oilSalt to tastePepper to tasteCayenne pepper to taste
Directions
Preheat oven to 375 degrees F.

Place olive oil into skillet and heat. Chop zucchini and tomatoes into small cubes. Mince onion very finely. Add these ingredients plus can of corn (drained) and can of chilies into skillet. Add some salt and pepper. Saute' for about 5 minutes, stirring often. Remove from skillet and set aside.

Add turkey into pan and brown until thoroughly cooked.

Add all the sauteed ingredients plus about 3/4 cups of cheese. Add a dash more salt and pepper, plus Cayenne pepper (if desired) and toss ingredients together.

Place mixture into casserole pan sprayed lightly with cooking spray - or non-stick foil. Sprinkle top with remainder 1/4 cup of shredded cheese.

Bake at 375 for about 30 minutes or until cheese is melted and lightly browned.
